Prune Cookies (Vegan, Gluten-Free)

1. Place the prunes in a small dish with the orange juice and put aside to soak for half-hour.

2. Course of all cookie dough substances in a mini meals processor till the combination begins to type a ball (notice if the combination is just too sticky, add a bit extra flour, if too dry, add a bit extra maple syrup).

3. Kind the combination right into a ball along with your palms and knead briefly, then flatten right into a disk. Place the disk between two sheets of parchment paper on a flat floor and use a rolling pin to roll out into an ⅛” thickness, and roughly the form of a rectangle. Take away the highest layer of parchment and put aside (leaving the bottom resting on the underside parchment sheet for now). Put aside.

4. As soon as the prunes have soaked, add the prune and orange juice combination, together with all remaining filling substances right into a mini meals processor and course of to mix right into a thick and barely chunky combination.

5. Preheat oven to 350F.

6. Whereas the oven is pre-heating, unfold the filling combination in an excellent layer over the dough, leaving about ½ an inch clear throughout the perimeters. Then, beginning at one lengthy fringe of the rectangle, rigorously roll up the 2 layers into an extended, tight log (I take advantage of the underside sheet of parchment paper to assist by lifting one of many sides of the rolled out dough and rolling it up from there).

7. Switch the cookie log together with the parchment paper it is on onto a reducing board. Fastidiously minimize into slices which can be about 1″ skinny.  Then raise the parchment together with all of the cookies and thoroughly switch onto a baking sheet (leaving them in identical place and spacing as if you sliced the log).

8. Bake in a pre-heated oven for quarter-hour (or till they start to golden up just a little).

9. Prepare dinner on a wire rack for 10 minutes or so and revel in! If you would like, sprinkle them with some coconut milk powder previous to serving.
