Pecan Praline Upside-Down Cake

  • 1/4 cup (85 grams) mild corn syrup
  • 1 teaspoon (5 grams) contemporary lemon juice
  • 1/2 teaspoon (1.5 grams) kosher salt
  • Preheat oven to 350°F (180°C).

  • For topping: In a 10-inch cast-iron skillet, convey pecans, butter, brown sugar, corn syrup, lemon juice, and salt to a boil over medium warmth, stirring often till sugar dissolves; cook dinner, stirring sometimes, till barely thickened and bubbly, 2 to three minutes. Take away from warmth.

  • For cake: Within the bowl of a stand mixer fitted with the paddle attachment, beat butter and brown sugar at medium pace till fluffy, 3 to 4 minutes, stopping to scrape sides of bowl.   • Spray sides of skillet with baking spray with flour. Spoon batter onto topping, gently smoothing high with an offset spatula. Place skillet on a baking sheet.

  • Bake till a picket choose inserted in middle comes out clear, 35 to 40 minutes. Let cool for five minutes. Place a serving plate on cake; fastidiously invert cake on plate. Let cool for quarter-hour earlier than serving.
