Cherry Crème Fraîche Cookies

  • ½ teaspoon (2.5 grams) baking powder
  • ¼ teaspoon (1.25 grams) baking soda
  • ¼ teaspoon kosher salt
  • 1 cup (200 grams) pearl sugar*
  • In a small saucepan, deliver dried cherries and kirsch to a boil over medium-high warmth. Cut back warmth to low; cook dinner, stirring sometimes, till virtually all liquid has evaporated, 8 to 10 minutes. Take away from warmth, and let cool fully.
